Intelligence - Viognier

If you want to go too far, you get lost.

I had to learn to understand that with the Viognier grape , if makes no sense to push aging…. you risk to end up with a mushy, heavy, cloudy wine: everything that I don't like.

So, we monitor the balance from the pruning, the work in the vineyard and  the moment of the harvest: it’sessential!

The balance, the tightness, its aromatic explosion, everything hangs on a thread.

And without intelligence ... or without “aïme", as we say in Occitan, the result would not be there.
